I apologize for my lack of posting. Our pool was finished a little over a week ago, and I think being in it all of the time has reduced my brain to a quivering mass of nothingness. I haven't made anything too exciting to post about, no new recipes, no trips to amazing restaurants. But I did take a few pictures of some food I have made, mainly so I don't feel too guilty about not posting. *sigh*
Okay, I lied. This is one of the few recipes I did try lately: Spiced rum seitan with coconut rice and pineapple salsa. My sister made me a book full of her greatest recipes a few years ago (she is quite the clever cook!), and most of them are veggie or vegan, but this recipe originally called for shrimp. I really like seitan, so I substitued it in lieu of the shrimp in the rum marinade. I will post the entire recipe as soon as I get off of my lazy chlorinated butt and go find it. :-) I think I might try tofu next time.
This was a breakfast from a few days ago...it looks like a horror film prop or something! But it is just steel cut oatmeal sweetened with prickly pear cactus syrup. Yummy.
Lentil stew. Excellent mopped up with a chunk of heavenly sourdough bread. Mmmm.
Marinated corn and grape tomato salad. Another recipe from my sister's handy recipe book. Delicious!
Note: I will be away for almost two weeks starting on Thursday. We are heading off to a cabin in Lake Tahoe for a much needed getaway (because lounging in the pool is HARD WORK I tell ya!!!). Does anyone know of a good grocery store or restaurant in the Reno/Tahoe area where I can find fresh organic produce or vegan friendly food? We are driving, so I will be bringing a bunch of my pantry essentials and as much produce as I can manage, but I assume I will need to make a grocery store-run at least once while there. And ideas/advice/bits of wisdom?

I have to make this post quick, as I am almost late to swimming lessons....so here are a few pics from the last week, with quickie descriptions.
Cinnamon Raisin Rolls by Zen Bakery from Trader Joes, with a little homemade icing (soymilk and powdered sugar). So gooooooooood.
Homemade Chocolate Chip Brownies. Moist. Gooey. Yum.
Big family breakfast with pumpkin pancakes, fried mush (polenta), tempeh bacon, and cantaloupe. Very satisfying. The pumpkin pancakes were fabulous!
Creamy Dill Pasta Salad with Artichoke Hearts. I snatched a package of Simply Organic Creamy Dill Dip mix from the pantry and mixed it with Vegenaise and a few splashes of red wine vinegar, added it to some cooked tricolor organic pasta and some chopped canned artichoke hearts, then let it marinate and chill in the fridge for a few hours. I am addicted to this pasta salad....I have made it 4 time since I took this picture!
4th of July taters. Red, white and blue taters marinated in lots of minced garlic, lemon juice, olive oil, oregano, salt and pepper, then roasted at 325 degrees for about 45 minutes until crisp and tender. Tasty and festive!
